Prepare the Vanilla Base
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Split the vanilla bean lengthwise and scrape the seeds into the mixture. Add the vanilla bean pod as well. Heat over medium heat until the mixture is hot but not boiling, stirring frequently.
Cool the Mixture
Remove the saucepan from heat and stir in the vanilla extract and a pinch of sea salt. Strain the mixture through a fine-mesh sieve into a bowl to remove the vanilla pod and any cooked egg bits. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
Churn the Ice Cream
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
Transfer the churned ice cream to an airtight container. Freeze for at least 4 hours or until firm before serving.
