Method

Preparation Instructions

  1. 1

    Prepare the Goat Cheese Baguette

Preheat your oven to 375°F (190°C). Slice the baguette in half lengthwise and spread the goat cheese evenly over the cut sides. Place the baguette on a baking sheet and bake for about 10-12 minutes or until the cheese is slightly golden and bubbly.

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the smoked bacon until crispy, about 6-8 minutes. Remove from the skillet and place on paper towels to drain excess fat. Once cooled, crumble the bacon into smaller pieces.

  3. 3

    Cook the Salmon

In the same skillet, add the salmon fillets and cook for about 4-5 minutes on each side, or until fully cooked and flaky. Remove from heat and let it cool slightly before flaking into bite-sized pieces.

  4. 4

    Prepare the Salad

In a large bowl, combine the arugula, crumbled bacon, and flaked salmon. Chop the beefsteak tomatoes into wedges and gently fold them into the salad.

  5. 5

    Make the Lemon-Caper Vinaigrette

In a small bowl, whisk together the juice of 1 lemon, 2 tablespoons of olive oil, 1 tablespoon of capers, salt, and pepper to taste.

  6. 6

    Assemble the Salad

Drizzle the lemon-caper vinaigrette over the salad mixture and toss gently to combine. Serve the salad on plates with slices of the goat cheese crusted baguette on the side.
