NY Strip Steak

Herb Boursin Whipped Potatoes

Sautéed Green Beans and Cherry Tomatoes

Method

Prepare the NY Strip

    Season the Steak

    Coarsely crush the black peppercorns and mix with salt. Rub this mixture all over the NY Strip steaks.

    Cook the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steaks and sear for 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Make Herb Boursin Whipped Potatoes

    Boil Potatoes

    Peel and cut the russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return to pot. Add Boursin cheese, butter, and heavy cream. Mash and whip until smooth. Season with salt to taste.

Sauté Green Beans and Cherry Tomatoes

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add green beans and cook for 5 minutes, then add cherry tomatoes and cook for an additional 3-4 minutes. Season with salt.

Caramelize Onions

    Cook Onions

    In a separate skillet, melt butter over medium-low heat. Add sliced onions and salt, cooking slowly until caramelized, about 15-20 minutes.

Prepare Red Wine Jus

    Make the Jus

    In a saucepan, combine red wine and beef stock. Bring to a simmer and reduce by half. Stir in butter and season with salt to taste.
