    Prepare the Potatoes

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly, then cut into bite-sized pieces.

    Sauté the Asparagus and Red Onions

    In a skillet, add olive oil over medium heat. Add chopped asparagus and sliced red onions, sauté for about 5-7 minutes until tender. Season with salt and pepper.

    Make the Citrus Beurre Blanc

    In a small saucepan, melt 1/4 cup of butter over medium heat. Add minced garlic and cook until fragrant. Add lemon juice and reduce the sauce slightly. Remove from heat and whisk in the remaining butter until emulsified.

    Cook the Salmon

    Season salmon fillets with salt and pepper. In a separate skillet, heat olive oil over medium-high heat. Sear the salmon fillets skin-side down for 4-5 minutes until crispy. Flip and cook for an additional 3-4 minutes until cooked through.

    Combine and Serve

    In a large bowl, combine the potatoes, sautéed asparagus, and red onions. Plate the warm potato salad alongside the salmon, and drizzle citrus beurre blanc over the top before serving.
