Preparation
1. Prepare the Egg Salad
Place the eggs in a pot and cover them with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes. Cool, peel, and chop the eggs.
2. Mix Ingredients
In a bowl, combine chopped eggs, mayonnaise, Dijon mustard, salt, black pepper, and chives. Mix until well combined.
3. Prepare the BLT
Cook the applewood smoked bacon until crispy. Toast the jalapeño cornbread slices.
4. Assemble the Sandwich
Layer romaine lettuce, tomato slices, and egg salad on a slice of cornbread. Top with crispy bacon and another slice of cornbread.
