    Prepare the Filling

    In a large skillet over medium heat, combine chopped collard greens, shredded chicken, and diced tasso ham. Cook for about 5-7 minutes until the greens are wilted and the mixture is heated through. Remove from heat and let cool slightly.

    Assemble the Egg Rolls

    Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a little water on the edges to help seal.

    Fry the Egg Rolls

    In a deep pan or fryer, heat the oil over medium-high heat. Fry the egg rolls in batches for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Serve

    Serve the egg rolls hot with red pepper purée, spicy mustard, and peach chutney on the side for dipping.
