Preparation and Cooking
1. Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Add the chicken breasts, ensuring they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 2 hours or overnight for best results.
2. Prepare the Coating
In another bowl, mix the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. This will be your coating for the chicken.
3. Coat the Chicken
Remove the chicken from the buttermilk, allowing the excess to drip off. Dredge each piece in the flour mixture, making sure to coat thoroughly. Shake off any excess flour.
4. Heat the Oil
In a large cast iron skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).
5. Fry the Chicken
Carefully add the coated chicken breasts to the hot oil, cooking in batches if necessary. Fry for about 6-8 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
