    Prepare the Grits

    In a saucepan, bring 4 cups of water to a boil. Add the grits and reduce the heat to low. Cook, stirring occasionally, for about 20-25 minutes until thickened. Stir in the white cheddar cheese until melted and incorporated.

    Caramelize the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook, stirring frequently, until golden brown and caramelized, about 15-20 minutes.

    Cook the Salmon

    Pat the salmon fillets dry with a paper towel and season both sides with blackening seasoning. In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once hot, add the salmon fillets skin-side up. Cook for about 4-5 minutes per side, until blackened and cooked to your desired doneness.

    Prepare Tomato Butter

    In a small bowl, mix softened butter with finely chopped fresh tomatoes and a pinch of salt. Set aside.

    To serve, place a generous scoop of cheddar grits on each plate. Top with caramelized onions, a piece of blackened salmon, a dollop of tomato chutney, and a pat of tomato butter.
