Method

Cooking Catfish

    Prepare the Catfish

    Rinse catfish fillets and pat dry. Coat fillets with blackening seasoning on both sides.

    Cook the Catfish

    Heat olive oil in a skillet over medium-high heat. Add catfish fillets and cook for about 3-4 minutes on each side until blackened and cooked through.

Preparing Red Rice

    Cook the Rice

    In a pot, bring water to a boil. Add red rice and salt, reduce heat to low, cover, and simmer for about 40 minutes or until rice is tender.

Frying Green Tomatoes

    Prepare the Tomatoes

    Slice green tomatoes into 1/4 inch thick slices. Dip each slice in buttermilk, then coat in cornmeal mixed with salt and pepper.

    Fry the Tomatoes

    In a deep skillet, heat vegetable oil over medium heat. Fry the coated tomato slices until golden brown, about 3-4 minutes on each side. Drain on paper towels.

Making Habanero Chutney

    In a blender, combine habanero peppers, onion, garlic, vinegar, sugar, and salt. Blend until smooth. Transfer to a saucepan and simmer for 10 minutes.

Preparing Tomato Butter

    In a bowl, mix softened butter with tomato paste, salt, and pepper until well combined.
