Preparing the Broth
Prep the Ingredients
Peel and slice the ginger into thin pieces. Mince the garlic cloves.
Combine Ingredients
In a large pot, combine the chicken or beef broth, ginger, minced garlic, star anise, and cinnamon stick.
Simmer the Broth
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes to allow the flavors to develop.
Season the Broth
After simmering, add the fish sauce and salt to taste. Remove the ginger, star anise, and cinnamon stick before serving.
Cooking the Noodles and Meat
Prepare the Noodles
While the broth is simmering, prepare the rice noodles according to package instructions. Drain and set aside.
Cook the Meat
If using chicken or beef, cook it in a separate pan until fully cooked. For tofu, sauté it until golden brown. Slice the cooked meat into thin pieces.
Assembling the Soup
Combine Ingredients
In a bowl, layer the cooked rice noodles, followed by the sliced meat. Pour the hot broth over the noodles and meat.
Add Toppings
Top with bean sprouts, chopped green onions, and fresh cilantro. Serve with lime wedges on the side.
