Prepare the Ingredients
Wash the betel leaves thoroughly under running water to remove any dirt. Pat them dry using a clean kitchen towel.
Chop and Mix the Fillings
In a mixing bowl, combine the chopped roasted peanuts, grated coconut, dried shrimp, finely chopped shallots, and palm sugar. Mix well until all ingredients are evenly distributed.
Prepare the Chilies and Lime
Finely chop the bird's eye chilies and set them aside. Cut the lime into wedges for serving.
Assembly
Assemble the Mengkham
Take a betel leaf and place a spoonful of the filling mixture in the center of the leaf. If desired, add a few chopped chilies and some fresh mint or coriander leaves on top.
Wrap and Serve
Fold the sides of the betel leaf over the filling and then roll it up towards the tip. Repeat this process for the remaining leaves and filling. Serve with lime wedges on the side for squeezing over the rolls.
