Preparing the Soup Base
Combine Broth and Seasonings
In a large pot, combine the chicken or beef broth, soy sauce, fish sauce, sliced ginger, minced garlic, and lime juice. Bring the mixture to a gentle boil over medium heat.
Simmer the Soup
Once boiling, reduce the heat to low and let the soup simmer for about 15 minutes to allow the flavors to meld.
Cooking Noodles and Adding Toppings
Prepare Rice Noodles
While the soup is simmering, cook the large rice noodles according to package instructions, usually about 5-7 minutes. Drain and set aside.
Add Meat and Toppings
After the soup has simmered, add the sliced meat (chicken, beef, or tofu) to the pot. Allow it to cook for an additional 5-7 minutes until the meat is cooked through.
Serve the Soup
In large bowls, divide cooked rice noodles. Ladle the hot soup and meat over the noodles. Top each bowl with bean sprouts, sliced green onions, and fresh cilantro.
