Preparing the Soup Base

Prepare the Ingredients
Begin by slicing the galangal and chopping the lemongrass, making sure to bruise the lemongrass to release its flavor.

Simmer the Base
In a large pot, combine 4 cups of water with the sliced galangal, bruised lemongrass, kaffir lime leaves, and bird's eye chili peppers. Bring to a boil over medium heat.

Season the Broth
Once boiling, reduce heat to low and add the fish sauce. Let the broth simmer for 10 minutes to allow the flavors to meld.

Stir in the lime juice and remove the pot from heat.

Cook the Shrimp
Add the peeled and deveined shrimp to the pot and simmer for 3-4 minutes until they turn pink and are cooked through.
