Chicken Skewers Preparation

Marinate the Chicken
In a large bowl, combine soy sauce, lime juice, brown sugar, minced garlic, grated ginger, vegetable oil, salt, and black pepper. Whisk until the sugar dissolves. Cut the chicken breast into 1-inch cubes and add them to the marinade. Toss well to coat the chicken. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning. If using metal skewers, they can be used directly.

Skewer the Chicken
Once marinated, thread the chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).

Make the Peanut Sauce
In a small saucepan over low heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and sriracha (if using). Stir until smooth and heated through. If the sauce is too thick, add water a tablespoon at a time until desired consistency is reached.

Serve the Skewers
Remove the skewers from the grill and allow them to rest for a few minutes. Serve the chicken skewers warm with the peanut sauce on the side for dipping.
