Soak the Noodles
In a large bowl, soak the rice noodles in hot water for about 30 minutes or until softened. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together the fish sauce, tamarind paste, sugar, lime juice, and chili powder until well combined. Set aside.
Cooking

Cook the Tofu
In a large skillet or wok over medium heat, add a tablespoon of oil. Once hot, add the cubed tofu and cook until golden brown on all sides. Remove and set aside.

Cook the Shrimp
In the same skillet, add a bit more oil if necessary. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove and set aside.

Add Vegetables
Add minced garlic, julienned carrots, bean sprouts, and chopped green onions to the skillet. Stir-fry for about 2-3 minutes until the vegetables are tender but still crisp.

Combine and Finish
Add the softened rice noodles and the prepared sauce to the skillet. Toss everything together, cooking for an additional 2-3 minutes until heated through.
Serving

Garnish and Serve
Remove from heat and serve the Pad Thai hot, garnished with crushed peanuts, chopped cilantro, and lime wedges on the side.
