Method
Prepare the Sticky Rice
- 1
Rinse the Rice
In a bowl, rinse the glutinous rice under cold water until the water runs clear. This usually takes about 3-4 washes.
- 2
Soak the Rice
Soak the rinsed rice in water for at least 4 hours or overnight for best results.
- 3
Steam the Rice
After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam for about 30-40 minutes until the rice is translucent and tender.
Make the Coconut Sauce
- 4
Combine Ingredients
In a saucepan, combine the coconut milk, sugar, and salt. Cook over medium heat until the sugar dissolves but do not let it boil.
- 5
Mix with Sticky Rice
Once the rice is cooked, transfer it to a large bowl and pour about 3/4 of the coconut sauce over the warm sticky rice. Stir gently to combine. Let it sit for about 15 minutes to absorb the flavors.
Prepare the Topping
- 6
Slice the Mango
Peel and slice the ripe mango into thin strips.
- 7
Toast Sesame Seeds
In a small pan, toast the sesame seeds over medium heat for about 2-3 minutes until golden and fragrant.
Assemble the Dish
- 8
Plate the Sticky Rice
Scoop a portion of the sticky rice onto a plate.
- 9
Add Mango and Sauce
Top with sliced mango and drizzle the remaining coconut sauce over the top. Sprinkle with toasted sesame seeds.
- 10
Serve
Serve warm or at room temperature and enjoy your Mango Sticky Rice!
