Marinating the Chicken

Prepare the Chicken
Cut the chicken breast into bite-sized pieces, about 1 inch each.

Make the Marinade
In a mixing bowl, combine soy sauce, lime juice, brown sugar, minced garlic, curry powder, salt, and black pepper.

Marinate the Chicken
Add the chicken pieces to the marinade and mix well. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for more flavor.
Preparing the Peanut Sauce

Combine Ingredients
In a saucepan, add peanut butter, coconut milk, soy sauce, brown sugar, lime juice, minced garlic, chili flakes, and water.

Cook the Sauce
Heat the saucepan over medium heat, stirring constantly until the mixture is well combined and smooth. Bring to a gentle simmer. Allow it to cook for about 3-5 minutes, then remove from heat.

Adjust Consistency
If the sauce is too thick, add a bit more water until desired consistency is reached. Set aside.
Grilling the Chicken

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Skewer the Chicken
Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.

Arrange the grilled chicken skewers on a serving platter and serve hot with the peanut sauce on the side for dipping.
