1. Peel and Slice Plantains

Peel the green plantains carefully using a knife. Slice them thinly (about 1/8 inch thick) using a mandoline or a sharp knife. Aim for even slices for consistent cooking.

Place the sliced plantains in a bowl of cold water and let them soak for about 10 minutes. This helps to remove excess starch and makes them crispier when fried.
