Sautéed Asparagus

Prepare the Asparagus

Wash the asparagus thoroughly under cold running water. Snap off the tough ends of the asparagus spears.

Heat the Olive Oil

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté the Asparagus

Add the asparagus to the skillet and sauté for about 5-7 minutes, stirring occasionally, until they are bright green and tender.

Add Garlic and Seasoning

Minced 2 cloves of garlic and add them to the skillet along with 1 teaspoon of salt and 1 teaspoon of black pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.

Jerk Hollandaise

Melt the Butter

In a small saucepan, melt 1 cup of butter over low heat. Once melted, remove from heat and let it cool slightly.

Whisk Egg Yolks and Lemon Juice

In a heatproof bowl, whisk together 3 egg yolks and 1 tablespoon of lemon juice until the mixture is pale and slightly thickened.

Combine Ingredients

Place the bowl over a pot of simmering water (double boiler). Gradually whisk in the melted butter until the sauce thickens.

Add Jerk Seasoning

Stir in 1 tablespoon of jerk seasoning and a pinch of salt. Continue to whisk until fully combined and smooth.
