Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the chicken breast into bite-sized pieces, and season with salt and black pepper. Peel and devein the shrimp if necessary. Chop the bell peppers and slice the onion thinly. Mince the garlic cloves.

Cooking the Pasta

  1. 2

    Cook the Fettuccine

In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.

Making the Sauce

  1. 3

    Prepare the Curry Alfredo Sauce

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the curry powder and let it simmer for 2-3 minutes.

  2. 4

    Finish the Sauce

Add the grated Parmesan cheese to the sauce, stirring until melted and smooth. Adjust seasoning with salt and black pepper to taste.

Cooking the Protein and Vegetables

  1. 5

    Cook the Chicken and Shrimp

In another skillet, heat a little oil over medium-high heat. Add the diced chicken and cook for about 5-7 minutes until browned and cooked through. Remove from the skillet and set aside. In the same skillet, add the shrimp and cook for about 3-4 minutes until pink and opaque.

  2. 6

    Sauté the Vegetables

Add the chopped bell peppers and sliced onion to the skillet and sauté for about 5 minutes until softened.

Combining Everything

  1. 7

    Mix Pasta and Sauce

Add the cooked fettuccine to the sauce, followed by the cooked chicken, shrimp, and sautéed vegetables. Toss everything together until well combined and heated through.

Serving

  1. 8

    Plate the Rasta Pasta

Serve the Rasta Pasta hot, garnished with shaved Parmesan cheese and alongside slices of warm focaccia bread.
