Method

Preparation of Pork

  1. 1

    Marinate the Pork

In a large bowl, combine the garlic (minced), orange juice, lime juice, cumin, oregano, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Add Pork to Marinade

Place the pork shoulder in the bowl and coat it thoroughly with the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

  1. 3

    Preheat the Oven

Preheat your oven to 300°F (150°C).

  2. 4

    Sear the Pork

In a large oven-proof skillet or Dutch oven, heat the olive oil over medium-high heat. Remove the pork from the marinade and sear it on all sides until browned, about 3-4 minutes per side.

  3. 5

    Bake the Pork

Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 4-5 hours, until the pork is fork-tender.

Serving

  1. 6

    Shred the Pork

Remove the pork from the oven and let it rest for 15 minutes. Shred the pork using two forks.

  2. 7

    Prepare to Serve

Serve the shredded pork over cooked white rice, with black beans on the side. Garnish with fresh cilantro and lime wedges.
