Cornbread

Preheat and Prepare
Preheat your oven to 400°F (200°C). Grease a 9x9 inch baking pan or cast iron skillet.

Combine Dry Ingredients
In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Whisk together until well mixed.

Mix Wet Ingredients
In another bowl, whisk together the eggs, milk, melted butter, and mashed sweet potato until smooth.

Combine and Mix
Pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix.

Bake
Pour the batter into the prepared baking pan. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

Cool
Remove from the oven and let cool for a few minutes before slicing.
Hot Honey

Mix Honey and Spice
In a small saucepan over low heat, combine the honey and red pepper flakes. Stir until well blended and warm, about 5 minutes. Remove from heat and let cool slightly.
Cinnamon Butter

Combine Ingredients
In a small bowl, mix the softened butter, powdered sugar, and cinnamon until smooth and well combined.

Serve
Transfer the cinnamon butter to a serving dish and keep at room temperature until ready to serve with cornbread.
