Fritters Preparation

Prepare the Seafood
Chop the fresh conch meat and shrimp into small pieces and set aside.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Mix well.

Combine Mixtures
Add the seafood to the dry ingredients, then pour in the wet mixture. Add the chopped green onions and parsley. Stir until just combined; do not overmix.

Heat Oil
In a deep frying pan, heat vegetable oil over medium heat until hot (around 350°F or 175°C).

Fry Fritters
Using a tablespoon, scoop the fritter batter and carefully drop it into the hot oil. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Combine Sauce Ingredients
In a small bowl, mix together mayonnaise, ketchup, hot sauce, lemon juice, and garlic powder until smooth.

Add salt to taste. Adjust the hot sauce based on your spice preference.
