Method

Crust Preparation

  1. 1

    Make the Pie Crust

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the chilled and cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  2. 2

    Form the Dough

Gradually add ice water, one tablespoon at a time, mixing until the dough holds together without being sticky. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  3. 3

    Roll Out the Dough

On a floured surface, roll out the dough into a circle about 12 inches in diameter. Place it in a 9-inch pie pan, trimming any excess dough hanging over the edges. Prick the bottom with a fork to prevent bubbling.

  4. 4

    Pre-bake the Crust

Preheat the oven to 375°F (190°C). Pre-bake the crust for 10-12 minutes, or until lightly golden. Remove from the oven and allow to cool.

Filling Preparation

  1. 5

    Prepare the Filling

In a large mixing bowl, whisk together the eggs, granulated sugar, milk, vanilla extract, and salt until well combined.

  2. 6

    Add the Coconut

Fold in the sweetened shredded coconut into the egg mixture until evenly distributed.

  3. 7

    Fill the Crust

Pour the coconut filling into the pre-baked pie crust, spreading it evenly.

Baking

  1. 8

    Bake the Pie

Bake the pie in the preheated oven for 25-30 minutes, or until the filling is set and the top is lightly golden.

  2. 9

    Cool the Pie

Once baked, remove the pie from the oven and let it cool on a wire rack for at least 1 hour before slicing.

Serving

  1. 10

    Serve

Slice the coconut pie and serve with whipped cream and toasted coconut flakes on top if desired.
