Cook the Rice

If not already cooked, prepare the white rice according to package instructions. Allow it to cool before using.

Prepare the Chicken

Grill the chicken breast until fully cooked. Let it rest for a few minutes before dicing into bite-sized pieces.

Fry the Eggs

In a large skillet or wok, heat a tablespoon of sesame oil over medium heat. Crack the eggs into the skillet and scramble them until fully cooked. Remove from the skillet and set aside.

Sauté Vegetables

In the same skillet, add the diced carrots and frozen peas. Sauté for about 3-4 minutes until the vegetables are tender.

Combine Ingredients

Add the cooked rice, pigeon peas, and diced grilled chicken to the skillet. Stir well to combine everything.

Season the Dish

Pour in the soy sauce, and sprinkle with salt and black pepper. Stir-fry for another 5 minutes, ensuring all ingredients are well-mixed and heated through.

Finish with Eggs and Green Onions

Finally, add the scrambled eggs and chopped green onions. Stir everything together and cook for an additional 2 minutes. Serve hot.
