Preparation

Pickled Onions

1. Prepare the Pickled Onions

In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil over medium heat, stirring until the sugar and salt dissolve. Remove from heat and add the sliced red onions. Allow to cool, then transfer to a jar and refrigerate for at least 1 hour, or overnight for best flavor.

Cajun Butter

2. Make the Cajun Butter

In a medium saucepan over low heat, melt the unsalted butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant. Stir in the Cajun seasoning, lemon juice, chopped parsley, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.

3. Prepare Mussels and Shrimp

Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped. In a large skillet or pot, add the cleaned mussels and shrimp. Pour the prepared Cajun butter over the seafood and stir to combine. Cover and cook over medium heat for about 5-7 minutes or until the mussels have opened and the shrimp are pink and opaque.

Toast Points

4. Prepare the Toast Points

Preheat the oven to 400°F (200°C). Place sliced baguette on a baking sheet and brush with olive oil. Bake in the preheated oven for about 5-7 minutes, or until golden and crispy. Remove from oven and set aside.

Serving

5. Serve the Dish

Serve the mussels and shrimp in a large bowl, drizzling any excess Cajun butter over the top. Garnish with pickled onions and serve with toasted baguette points on the side for dipping. Enjoy!
