Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine the warm milk (about 110°F/43°C) and the active dry yeast. Add the sugar and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, salt, and any remaining sugar.

  3. 3

    Combine Ingredients

Make a well in the center of the dry ingredients and add the frothy yeast mixture, eggs, melted butter, and vanilla extract. Mix until a dough forms.

  4. 4

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

  5. 5

    Let the Dough Rise

Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Frying

  1. 6

    Prepare the Oil

In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

  2. 7

    Shape the Beignets

Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thickness. Cut into squares (about 2-3 inches).

  3. 8

    Fry the Beignets

Carefully drop the squares into the hot oil, frying a few at a time for about 2-3 minutes on each side, or until golden brown.

  4. 9

    Drain and Coat

Remove the beignets from the oil using a slotted spoon and drain on paper towels. While still warm, dust liberally with powdered sugar.
