    Prepare the Potatoes

    Peel and chop the potatoes into even pieces. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.

    Make the Pomme Purée

    Mash the potatoes using a potato masher or ricer. Add in the butter, milk, and nutmeg. Mix until smooth and creamy. Season with salt to taste. Keep warm.

    Prepare the Steak

    Season the hanger steak generously with salt and crushed black peppercorns on both sides. Heat olive oil in a skillet over high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from skillet and let it rest for 5 minutes.

    Make the Au Poivre Sauce

    In the same skillet, reduce the heat and add butter. Once melted, add whole garlic cloves and cook until fragrant. Add heavy cream and simmer for 5 minutes, scraping up any brown bits from the pan. Adjust seasoning with salt and pepper.

    Serve

    Slice the steak against the grain. Plate the pommes purée and top with the sliced steak. Drizzle with the au poivre sauce.
