    Make the Choux Pastry

    In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Once boiling, add the flour and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat and let cool for a few minutes.

    Incorporate Eggs

    Add eggs one at a time, stirring well after each addition until fully incorporated. The dough should be smooth and glossy. Stir in the grated cheese, diced ham, and pepper.

    Pipe the Dough

    Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Use a piping bag fitted with a large round tip to pipe small mounds of the dough onto the prepared sheet, spacing them about 2 inches apart.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the gougères are puffed and golden brown. Remove from the oven and let cool slightly.

    Prepare Truffle Mornay Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour and cook for 1 minute. Gradually whisk in 1 cup of milk until smooth. Cook until thickened. Stir in truffle oil and grated Parmesan cheese until melted.

    Serve

    Drizzle the truffle Mornay sauce over the warm gougères and serve immediately.
