1. Prepare the Short Ribs
Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.
2. Cook the Aromatics
In the same pot, add minced garlic and cook for about 1 minute until fragrant. Then add the cherry tomatoes and thyme, cooking until the tomatoes start to burst.
3. Braise the Short Ribs
Return the short ribs to the pot and add beef broth. Bring to a simmer, cover, and transfer to the oven. Braise for about 2.5 to 3 hours until the ribs are tender.
4. Prepare the Gnocchi
In a large pot of boiling salted water, cook the gnocchi according to package instructions. They are done when they float to the surface. Drain and set aside.
5. Combine Everything
Once the short ribs are cooked, remove them from the pot and shred the meat. Return the shredded short ribs to the pot with the cooking liquid, and add the gnocchi. Stir to combine and let it simmer for an additional 5 minutes.
6. Plate and Serve
Serve the gnocchi and short rib mixture in bowls, topped with smoked ricotta, fresh basil, and grated Parmesan cheese.
