    Cook the Pasta

    In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Caramelize the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced onions and sprinkle with sugar. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes.

    Make the Cheese Sauce

    In a separate large saucepan, melt 4 tablespoons of butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually whisk in the milk, and continue cooking, whisking frequently, until the mixture thickens, about 5-7 minutes. Stir in the gruyere and cheddar cheese until melted and smooth. Season with salt and pepper.

    Combine Pasta and Sauce

    Add the cooked macaroni and caramelized onions to the cheese sauce, stirring until well combined.

    Bake

    Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Top with bread crumbs and fresh thyme. Bake for 25-30 minutes, or until the top is golden and bubbly.
