    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove it from the heat. Let sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water. Let them cool for about 5 minutes.

    Peel and Halve the Eggs

    Once cooled, gently tap the eggs on a hard surface and peel the shells off. Slice the eggs in half lengthwise and carefully remove the yolks.

    Make the Filling

    In a bowl, mash the egg yolks with mayonnaise, Dijon mustard, white vinegar, chopped chives, salt, and black pepper until smooth and creamy.

    Fill the Egg Whites

    Using a spoon or piping bag, fill the egg white halves with the yolk mixture.

    Garnish with Caviar

    Top each filled egg with a small dollop of caviar and a sprinkle of chopped chives for garnish.
