Prepare the Chicken
Preheat your oven to 375°F (190°C). Take each chicken breast and butterfly it to create a pocket. Place a slice of ham and a slice of Swiss cheese inside each pocket. Secure with toothpicks.

Breading the Chicken
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper. Dredge each chicken breast in flour, then dip in egg, and finally coat with breadcrumbs.

Prepare the Mustard Beurre Blanc
In a saucepan, melt 1/2 cup of butter over medium heat. Add chopped shallots and cook until soft. Pour in white wine and reduce by half. Lower the heat and whisk in the remaining butter until emulsified. Stir in mustard and keep warm.

Serve
Plate the chicken cordon bleu with a generous drizzle of mustard beurre blanc and serve alongside the sautéed charred kale.
