Bone Marrow with Short Rib & Red Onion Gastrique

    Prepare the Short Ribs

    Season the short ribs with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove from heat and set aside.

    Make the Gastrique

    In the same skillet, add sliced red onions and cook until softened. Add sugar and red wine vinegar, bringing to a simmer. Cook until thickened, about 10 minutes. Set aside.

    Roast the Bone Marrow

    Preheat the oven to 450°F (232°C). Place the bone marrow bones upright on a baking sheet and roast for 15-20 minutes until the marrow is soft and begins to separate from the bones.

    Serve

    Slice the baguette and toast it lightly. Serve the roasted bone marrow alongside the short ribs, drizzled with the red onion gastrique, and house pickles on the side.
