Fry the Chips
Cut the corn tortillas into eighths to form triangles. Heat the vegetable oil in a large frying pan over medium-high heat. Once the oil is hot, add the tortilla pieces in batches and fry until golden and crispy, about 2-3 minutes. Remove the chips with a slotted spoon and drain on paper towels. Season with salt while warm.

Prepare Taco Meat
In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat. Stir in taco seasoning and water, and simmer for about 10 minutes until the mixture thickens.
Chorizo

Cook Chorizo
In a separate skillet over medium heat, add the chorizo sausage and cook until fully browned and cooked through, about 5-6 minutes. Drain any excess grease and set aside.
White Queso

Make the White Queso
In a saucepan over medium heat, combine white cheese, milk, cream cheese, and diced jalapeños. Stir continuously until the mixture is smooth and creamy, about 5-7 minutes. Remove from heat and set aside.

Layer the Nachos
On a large serving platter, layer the fried chips as the base. Evenly distribute the taco meat and chorizo on top of the chips. Pour the white queso over the meat and chips, allowing it to drizzle down. Top with shredded lettuce, pico de gallo, sliced jalapeños, salsa, and sour cream as desired.
