Marinate Chicken
In a bowl, combine olive oil, minced garlic, chopped fresh rosemary, lemon juice, salt, and black pepper. Add the chicken breasts and coat them well. Cover and refrigerate for at least 30 minutes.
- 2
Prepare Vegetables
While the chicken is marinating, wash and trim the asparagus. Cut the cherry tomatoes in half.
Cooking
- 3
Cook Chicken
Preheat the oven to 400°F (200°C). Take the marinated chicken breasts out of the refrigerator and place them on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- 4
Roast Vegetables
In the last 10 minutes of the chicken's cooking time, add the asparagus and halved cherry tomatoes to the baking sheet around the chicken. Drizzle with a little olive oil and season with salt and pepper. Roast until tender.
- 5
Serve
Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Slice the chicken and serve with the roasted vegetables and a sprinkle of grated Parmesan cheese on top.
