Battered Fish

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and ground black pepper. Mix well.

Add Sparkling Water
Gradually add the cold sparkling water to the dry ingredients, whisking until smooth and free of lumps. Let it sit for 10 minutes.

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry for 5-7 minutes, or until golden brown. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the Russet potatoes into thick fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Heat Oil for Frying
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Drain and pat the potatoes dry. Fry them in the hot oil for about 5-6 minutes until golden and crispy. Remove and drain on paper towels, then sprinkle with salt.
Tartar Sauce

Mix Sauce Ingredients
In a small bowl, combine the mayonnaise, diced pickles, diced capers, lemon juice, and chopped fresh dill. Stir until well mixed.

Add salt to taste, and adjust other ingredients if necessary.
