Preparation

    Prepare the Ingredients

    Wash and dice the potatoes, slice the carrots, chop the celery and onions, and cut the beef into bite-sized cubes.

Cooking

    Brown the Beef

    In a large skillet over medium-high heat, brown the beef cubes on all sides. This should take about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onions, celery, and minced garlic. Sauté for about 3-4 minutes until the onions are translucent.

    Combine All Ingredients

    In a slow cooker, add the browned beef, sautéed vegetables, diced potatoes, sliced carrots, brown ale, beef broth, thyme, bay leaves, salt, and pepper.

    Cook the Stew

    Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the vegetables are cooked through.

    Serve

    Remove the bay leaves before serving. Serve hot, garnished with fresh parsley if desired.
