Method
Preparing the Fish

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the Guinness® stout until the batter is smooth and thick. Let it rest for about 15 minutes.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil, frying in batches if necessary. Cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Cut the Potatoes
Peel the russet potatoes and cut them into thick strips to make fries.

Fry the Fries
In another pot, heat oil (if using the same oil, wait until fish is cooked and oil is heated) and fry the potato strips until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt.
Making the Stout Tartar Sauce

Mix the Ingredients
In a bowl, combine mayonnaise, dill pickle, capers, lemon juice, and Guinness® stout. Stir well and season with salt and black pepper to taste.
Preparing Pasta Salad or Coleslaw (optional)

Cook the Pasta
If making pasta salad, cook the pasta according to package instructions. Drain and let cool.

Combine Salad Ingredients
In a bowl, mix the cooked pasta, cherry tomatoes, cucumber, olive oil, vinegar, salt, and black pepper. Toss to combine.
