Method
Prepare Mushrooms
- 1
Clean and Season
Rinse the portobello mushrooms under cold water and pat them dry with paper towels. Remove the stems and season both sides with salt and black pepper.
Breading Process
- 2
- 3
Breading the Mushrooms
Dip each seasoned mushroom into the flour, coating evenly. Next, dip the floured mushroom into the egg mixture, allowing excess to drip off. Finally, coat the mushroom in breadcrumbs pressing lightly to adhere.
Frying Process
- 4
Heat Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of bread; if it sizzles, the oil is ready.
- 5
- 6
Second Fry
Once all mushrooms are fried, return them to the hot oil for a second fry, cooking for an additional 2-3 minutes until extra crispy. Drain again on paper towels.
Assemble Burgers
- 7
Add Cheese
While the mushrooms are still hot, place two slices of Swiss cheese on each mushroom, allowing it to melt slightly.
- 8
Build the Burger
On the bottom half of each burger bun, place a layer of lettuce, followed by a fried mushroom with melted cheese. Top with a slice of tomato and finish with the top half of the bun.
