Chorizo & White Queso

Cook the Chorizo
In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes until browned and cooked through, breaking it apart with a spatula.

Prepare the Queso
Lower the heat to medium-low and add the cream cheese to the skillet with the chorizo. Stir until melted and combined.

Add Cheeses and Milk
Stir in the shredded Monterey Jack cheese and milk. Continue to stir until the cheese is melted and the mixture is smooth.

Prepare the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 180°C (350°F).

Cut the Tortillas
While the oil is heating, cut the corn tortillas into quarters to form triangle-shaped chips.

Fry the Chips
Once the oil is hot, carefully add a few tortilla pieces at a time. Fry for about 2-3 minutes or until they turn golden brown, turning occasionally.

Drain and Season
Use a slotted spoon to remove the chips from the oil and transfer them to a paper towel-lined plate. Immediately sprinkle with salt to taste.
