Method

Cooking the Sausages

    Prepare the Sausages

    In a large skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the Irish sausages and cook for about 12-15 minutes, turning occasionally until they are browned and cooked through.

Making the Mashed Potatoes

    Boil the Potatoes

    Peel and chop the Russet potatoes into even-sized chunks. Place them in a large pot, cover with cold water, and add 1 teaspoon of salt. Bring to a boil and cook for 15-20 minutes or until fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and 1 cup of milk. Mash until smooth and creamy. Season with additional salt and black pepper to taste.

Making the Gravy (optional)

    Sauté the Onion

    In the same skillet used for the sausages, add the chopped onion. Sauté over medium heat until translucent, about 5 minutes.

    Prepare the Gravy

    Add 2 cups of beef broth to the skillet with the onions. In a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry. Stir this into the broth and cook until thickened, about 3-4 minutes. Season with salt and black pepper to taste.
