For the Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel the Russet potatoes and cut them into quarters. Place them in a large pot and cover with water. Add a pinch of salt.

    Boil the Potatoes

    Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and let simmer for about 15-20 minutes or until the potatoes are tender.

    Add Garlic

    In the last 5 minutes of boiling, add the garlic cloves to the pot.

    Drain and Mash

    Once cooked, drain the potatoes and garlic. Return them to the pot and add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

For the Caramelized Onions

    Slice the Onions

    Thinly slice the onions.

    Cook the Onions

    In a skillet, heat olive oil over medium heat. Add the sliced onions and sprinkle with salt. Cook, stirring occasionally, for about 20-25 minutes until they are golden brown and caramelized.

For the Grilled Sausages

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Sausages

    Place the sausages on the grill and cook for about 6-8 minutes, turning occasionally until they are browned and cooked through.

For the House Ale Gravy

    Make the Roux

    In a saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and cook for about 1-2 minutes until it turns a light golden color.

    Add the Liquids

    Slowly whisk in the beef broth and house ale. Stir continuously until the mixture thickens, about 5-7 minutes.

    Season the Gravy

    Add Worcestershire sauce, salt, and black pepper. Stir well and remove from heat.
