Spread 1 tablespoon of butter on one side of each slice of sourdough bread. This will give the sandwich a rich flavor and a golden crust.

In a skillet over medium heat, add a tablespoon of butter and sliced onions. Cook, stirring occasionally, for about 15-20 minutes until they are golden brown and sweet.

In another skillet, cook the bacon slices over medium heat until crispy. Drain on paper towels and chop into pieces.

On the unbuttered side of two slices of bread, layer half of the cheddar cheese, followed by half of the gouda cheese, caramelized onions, chopped bacon, and fresh spinach. Top with the remaining cheese and cover with the other two slices of bread, buttered side facing out.
