Steak Preparation

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Generously season both sides with kosher salt and black pepper. Allow the steaks to sit at room temperature for about 30 minutes to enhance flavor.

    Prepare the Skillet

    Heat a large cast-iron skillet over high heat for about 5 minutes until it is smoking hot. Add the olive oil, swirling to coat the bottom of the skillet.

    Sear the Steak

    Carefully place the ribeye steaks in the hot skillet. Sear for about 4-5 minutes on one side until a golden-brown crust forms. Do not move the steaks during this time.

    Add Aromatics

    Flip the steaks using tongs. Add the garlic cloves and rosemary into the pan. Continue cooking for another 4-5 minutes for medium-rare, basting the steaks with the melted fat and aromatics.

    Rest the Steak

    Remove the steaks from the skillet and transfer them to a cutting board. Cover loosely with aluminum foil and let them rest for about 5-10 minutes to retain juices.

    Prepare Asparagus

    While the steak is resting, trim the ends of the asparagus. In the same skillet used for the steak, add a little more olive oil if needed. Sauté the asparagus for about 3-4 minutes until tender but still crisp.

    Prepare Potatoes

    Wash and cut the potatoes into wedges. Boil in salted water for about 10-15 minutes until fork-tender. Drain and toss with olive oil, salt, and pepper, then roast in the oven at 400°F (200°C) for 20 minutes.
