Prepare the Filet Mignon
Remove the filet mignon from the refrigerator and let it sit at room temperature for 30 minutes before cooking.

Preheat the Grill
Preheat your grill to high heat (about 450°F to 500°F).

Add Butter and Rosemary (Optional)
In the last minute of cooking, add a tablespoon of butter and a sprig of rosemary on top of each steak for added flavor.

Rest the Steaks
Remove the filet mignon from the grill and let it rest on a plate for 5-10 minutes. This allows the juices to redistribute and keeps the meat tender.

Prepare Red Wine Sauce (Optional)
In a small saucepan, add 1 cup of red wine. Bring to a simmer and reduce by half, then pour over the rested filet mignon before serving.
