Crust Preparation

    Make the Pie Crust

    In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.

    Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Filling Preparation

    Prepare Apple Filling

    In a large bowl, combine the sliced apples, granulated sugar, brown sugar, ground cinnamon, lemon juice, and cornstarch. Toss to coat the apples evenly.

Cherry Filling Preparation

    Prepare Cherry Filling

    In a separate bowl, combine the pitted cherries, granulated sugar, lemon juice, cornstarch, and almond extract. Mix well until the cherries are evenly coated.

Assembly and Baking

    Assemble the Pie

    Preheat the oven to 425°F (220°C). Roll out the pie crust on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and fill with either the apple or cherry filling.

    Roll out the second half of the dough and place it over the filling. Seal and cut slits in the top crust to allow steam to escape.

    Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbly. Let the pie cool for at least 30 minutes before serving.
