Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Dry Ingredients
In a mixing bowl, combine the flour, sugar, baking powder, and salt.

Combine and Bake
Pour the batter into a greased baking dish and top with the fruit. Bake for 30-35 minutes until golden brown.

Let cool slightly before serving warm, plain or with ice cream.
Carrot Cake with Cream Cheese Frosting

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and cinnamon.

Combine Mixtures
Gradually add the wet mixture to the dry ingredients, mixing until just combined. Fold in the grated carrots.

Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

In a medium bowl, beat together the cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.

Once the cakes are completely cool, place one layer on a serving plate, spread frosting on top, then add the second layer and frost the top and sides.
