Baked Lemon Herb Chicken

    Prepare the Marinade

    In a bowl, mix olive oil, lemon juice, minced garlic (2 cloves), thyme, rosemary, salt, and black pepper.

    Marinate the Chicken

    Place the chicken breasts in a large zip-top bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2 hours.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Bake the Chicken

    Place the marinated chicken breasts in a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

    Serve

    Remove from the oven and let it rest for a few minutes before serving.

Vegetable Stir-Fry

    Prepare the Vegetables

    Chop bell peppers into strips, cut carrots into thin rounds, and wash broccoli florets.

    Heat the Oil

    In a large skillet or wok, heat sesame oil over medium-high heat.

    Stir-Fry the Vegetables

    Add garlic (2 cloves, minced) and grated ginger. Stir-fry for about 30 seconds until fragrant, then add the bell peppers, broccoli, and carrots. Stir-fry for 5-7 minutes until vegetables are tender but crisp.

    Add Soy Sauce

    Pour the soy sauce over the vegetables and toss to coat evenly. Cook for an additional 1-2 minutes.

    Remove from heat and garnish with sliced green onions before serving.
