Preparation of Meat

    Tenderize the Steak

    Using a meat mallet, gently pound the beef cube steaks to a uniform thickness of about 1/2 inch. This will help tenderize the meat and ensure even cooking.

    Prepare the Breading Station

    In a shallow dish, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. In another bowl, whisk together the eggs and milk until well combined.

    Bread the Steaks

    Dip each tenderized steak first into the flour mixture, coating both sides. Then, dip it into the egg mixture, allowing any excess to drip off. Finally, return the steak to the flour mixture for a second coating. Set aside on a plate.

Frying the Steaks

    Heat the Oil

    In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.

    Fry the Steaks

    Carefully add the breaded steaks to the hot oil, cooking in batches if necessary to avoid overcrowding. Fry each steak for about 4-5 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the steaks and place them on a paper towel-lined plate to drain excess oil.

Making the Gravy

    Prepare the Gravy Base

    In the same skillet used for frying, discard excess oil, leaving about 1/4 cup in the pan. Add the butter and melt over medium heat.

    Thicken the Gravy

    Once the butter is melted, whisk in the flour and cook for about 1-2 minutes until golden brown. Gradually whisk in the milk, stirring constantly until the mixture thickens. Add salt and black pepper to taste.

    Serve the chicken fried steak hot, topped with the homemade gravy. Enjoy with your favorite sides!
